Broccoli Soup

11/2 cups chopped broccoli
1/4 cup chopped onion
1 cup chicken broth, fat-free
1/2 cup grated fat-free cheese (Cheddar or Swiss)
2 cups skim milk
2 Tbs. cornstarch
Dash pepper
2-3 scoops Phoyto Soy

Boil vegetables and broth in large saucepan. Reduce heat and cover until tender (about 10 minutes). Add milk, pepper and cornstarch. Stir until soup thickens. Remove from heat and add cheese stirring until melted. Cool, then add Protein. Makes 4 servings.

Apple-Cinnamon Soy Cookies - 0 Carb

4 scoops Apple-Cinnamon Soy Creations
2 tsp vanilla extract
3/4 c of water
12 packets
Stevia Powder
2 tsp baking powder
2 eggs
1/2 c whipping cream
2 Tablespoons vegetable oil

Preheat oven to 350. blend vanilla, sugar, water, eggs, cream, and baking powder. Blend in Soy Creatine then oil. Blend well.  Place spoonful of mixture on non-stick cookie sheet. Bake  for approximately 15-20 minutes or until golden brown.

Chocolate-Pecan Shortbread Drops - 2 Carbs

2 sticks unsalted butter, softened
9 packets Stevia Powder
1 egg
1/2 cup pecans, finely chopped 
1 cup Chocolate Phoyto Soy

Heat oven to 300. With an electric mixer beat butter until fluffy. beat in sugar substitue and egg. Add chopped pecans, bake mix, and cocoa; beat until well blemded. Drop by heaping teaspoonsful 1 apart onto non-stick baking sheets. Bake 14 minutes. Makes 36 cookies - per cookie: 72 cal, .5 gm protein, 6.5 gms fat, 1.5 gms total carbs.

Peanut Butter Protein Balls - 2 gms Carb

1/3 cup chunky peanut butter
2 Tbs. Designer Protein Natural
1 tsp. honey
1/2 tsp. vanilla extract
1/2 Tbs. chopped chocolate chips
Shredded coconut
Combine all above ingredients in food processor and mix until desired consistency. Make mixture into 12 balls and roll in coconut or Protein. Refrigerate.
Total Time: 10 minutes

Oatmeal-Chocolate Chunk Cookies - 2.5 Carbs

1 cup rolled oat (not instant)
2 cups Vanilla Phoyto Soy
1/2 teaspoon salt
1 slick unsalted butter, cut in small pieces
1/2 cup  canola oil
9 packets Stevia Powder
2 teaspoons of Egg D'Lite
2 1 oz. squares unsweetened baking chocolate, chopped

Heat over to 350. Place oatmeal in a food processor; pulse until fine. Add Soy Pro and salt and pulse to comine. Add butter, canola iol and Stevia packets pulse until granular, about 1 minute. Add Egg D' Lite; pulse until a dough forms. Transfer dough to a mixing bowl; fold in chopped chocolate with a spatula ot wooden spoon. Drop by teaspoonsful 1" apart onto non-stick baking sheet. Bake 12 to 15 minutes, until edges are slightly brown. Makes 40 cookies - per cookie: 82 cal, 1 gm protein, 6 gms fat, 3.5 gms total carbs.

Cinnamon-Walnut Chews  - 2 Carbs

1 slick unsalted butter, softened
9 packets Stevia Powder
1 teaspoon Egg D'Lite
1 cup Vanilla Phoyto Soy
1/2 teaspoon salt
1 1/2 teaspoons cinnamon, divided
1/2 cup sour cream
2 teaspoon club soda
1 1/2 cups toasted walnuts, chopped
Note: Toasting the nuts intensifies their flavor. Heat oven to 400. With an electric mixer, beat butter until fluffy. beat in sugar substitute, and Egg'D Lite. In a small bowl, combine Phyoyto Soy powder, salt and half the cinnamon. With electric mixer on low speed, add half the dry ingredients to butter mixture. Add sour cream and club soda. Beat in remaining dry ingredients. Stir in walnuts with a spatula ot wooden spoon. Place heaping teaspoonsful of dough 1" apart on non-stick baking sheets. Sprinkle tops with remaining cinnamon. Bake 12 to 15 minutes, until golden and slightly firm. Transfer cookies to wire racks to cool.  Makes 40 Chews - pre cookie: 68 cal, 1.5 gms protein, 6 gms fat, 1.5 gms total carbs.

Blueberry Cookies - 0 Carb

4 scoops Blueberry Soy Creations
2 tsp vanilla extract
3/4 c of water
12 packets
Stevia Powder
2 tsp baking powder
2 eggs
1/2 c whipping cream
2 Tablespoons vegetable oil

1 egg yolk
1 teaspoon grated orange rind
2 teaspoon almond extract
2 Tablespoons club soda
3 3/4 cups unsweetened shredded coconut, divided

Heat over to 350. With an electric mixer, beat butter, cream cheese and stevia powder until light and airy. Add egg yolk, orange rind and almond extract. Beat until ingredients are well combined. In a separate bowl, combine Phoyto Soy and salt. Gradually add dry ingredients to cream cheese mixture. Stir in club soda; mix in 3 cups of shredded coconut. Pinch and roll dough into 1" balls. Spread remaining coconut on a plate; roll balls to coat. Place on non-stick baking sheets. Bake 12 to 15 minutes, until cocunut turns golden brown. Transfer cookies to wire racks to cool. Makes 40 cookies. per cookie 92 cal; 1 gm protein; 8 gm fat; 2.5 gm total carb.
