What Are Essential Fatty Acids and Why Are They Essential?
Essential Fatty Acids (EFAs) are fats that are needed by the body but are not manufactured by it and thus must be obtained through the diet.

You should only avoid trans fatty acids, such as those found in deep fried foods. Fats, whether they started out good or not, are irrevocably changed for the worse when they are heated. There are two main subtypes of EFA's: the Omega-3 and Omega-6 fatty acids. The Omega-3's are found in cold water fish (e.g., mackerel, herring, tuna) and in most nuts. The Omega-6's can be obtained from plant sources such as Evening Primrose, Borage and Flaxseed oils. All EFA's are polyunsaturated; they have carbon bonds that are easily broken and do not result in harm to the body. When EFA's are heated their bonds change and they become trans fatty acids: sticky and harmful fats.
Why Do I Need Essential
Fatty Acids?
You need them to live, and while most people aren't so deficient that they are facing a life or death situation, many people are in a state of chronic low levels of essential fatty acids. EFA's are needed for maintaining proper cell membrane structure-which allows the proper distribution of nutrients throughout your body, they are needed for proper prostaglandin formation and maintenance  and most notably for the efficient metabolism of cholesterol. It has been repeatedly noted in population studies that people who consume more fish (Omega-3's) consistently have a lower incidence of heart disease. Autopsies done on corpses have revealed a direct inverse correlation between the amount of Omega-3's present and the healthiness of the heart. Those with low levels of Omega-3's showed greater incidence of coronary heart disease than those with high levels of Omega-3's and those with the highest levels of Omega-3's had the lowest incidence of coronary heart disease.

Fatty Acids come from?
EFA supplements are usually derived from the oil of cold water fish such as herring, cod and bluefish, and from the oil of the seed of certain plants including rape (canola oil), flax, hemp, borage, evening primrose, and black currant. Important EFAs include the omega-3s (such as eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), and alpha linolenic acid, a plant oil-derived EPA/DHA precursor).

To answer this question, you need to honestly evaluate your diet. How much trans fatty acids do you consume (potato chips, french fries, margarine, etc.)? How much cold water fish and nuts do you eat? Does your family have a history of heart disease? Do you eat a lot of red meat? If you still can't decide and you live in the United States, given the typical American diet, there is probably room for supplementation of EFA's in your diet.
BORAGE OIL: Borage Oil is a vegetable oil derived from a blue-flowering plant (Borago officinalis) that is also used as an herb in Europe, primarily to restore adrenal function, alleviate PMS, and counter inflammation. The oil is taken as a supplement because it is one of the few natural sources of GLA. This may help in the prevention or treatment of heart disease, arthritis, skin problems, PMS. Borage oil may also stimulate the growth of hair and nails. It has a soothing effect when applied topically to the skin.
DHA: (fish oil) is an omega-3 essential fatty acid primarily found in the oil of cold-water fish: salmon, bluefish, herring, mackerel, and  tuna. Studies indicate it is capable of thinning blood and lowering blood fat and cholesterol levels. It may have therapeutic applications for heart disease, inflammatory conditions like arthritis, and psoriasis. Taken in excess, DHA can reduce blood clotting capability.
EPA: (fish oil) is an  omega-3 essential fatty acid primarily found in the oil of cold-water fish: salmon, bluefish, herring, mackerel, and tuna. It usually occurs with DHA and has similar effects on the body; it reduces inflammation and lowers blood fat and cholesterol levels. It may help in the treatment of arthritis, allergic reactions, heart disease, and skin conditions. Taken in excess, it can reduce blood clotting capability.
EVENING PRIMROSE OIL (EPO) : Evening Primrose is a fatty liquid extracted from the seeds of a yellow flowering willow family plant (Oenotherabiennis) that is a richly endowed source of the omega-6 essential fatty acid GLA. It is produced primarily in Great Britain and is a popular remedy in Europe. It is taken therapeutically, as are other essential fatty acids, to help prevent heart disease, arthritis, and inflammatory conditions. It is also used to treat skin problems and relieve symptoms of PMS. Technically, its use is still experimental, but few side effects have appeared.  Research
FLAXSEED: Flaxseed oil and GLA oils are referred to as the "medicinal oils." They have extensive healing properties; ethical manufacturers produce them under very exacting standards; and minute amounts go a long way toward health. (GLA, gamma-linolenic is found in evening primrose, black current, and borage oils and can be made in the body from linoleic acid.) An extra benefit of flaxseed oil is that it is the most abundant known source of lignans. Lignans are a special form of insoluble fiber. Compelling studies, some funded by the National Cancer Institute, have demonstrated impressive health benefits, including positive effects in relieving hot flashes, as well as anticancer, antibacterial, antifungal, and antiviral activity. The anticancer activity may be the most promising. Flaxseed lignans are changed by human intestinal bacteria into compounds which are extremely protective against cancer, particularly breast cancer. It is possible that as many as 80 percent of us are deficient in the essential fatty acids, particularly omega-3. Omega-3/EPA first became popular in the mid-80s when the low incidence of heart disease among fish-eating peoples was revealed. Flaxseed oil contains 57 percent omega-3 fatty acid and is the richest known plant source, containing twice as much omega-3 as fish oil. GAMMA LINOLENIC ACID (GLA): GLA is a biologically active omega-6 essential fatty acid found in significant quantities in oils derived from only a few plants, including evening primrose, hemp, borage, and black currant.
