The standard American diet is perhaps best typified by the meals that are served at restaurants. When you go to a restaurant, the menu usually includes meat and potatoes or rice, salad, bread, wine, water, dessert, and coffee. But in what order do you eat these food? Most often, as you wait for the food to arrive, you start drinking water, generally well chilled with ice, which drops your body's temperature.

This may seem innocuous enough, but it has far reaching implications in your body's digestive process. (Ice water was, in fact, the classical treatment for ulcers before today's modern drugs were available). Within the walls of the stomach are a group of cells, is to secrete the hydrochloric acid you require to digest food. When you drink water, you not only neutralize the acid; if the water is icy, you also anesthetize the parietal cells, making them incapable of doing their job.  Now, with the acid-producing cells in your stomach anesthetized, you are presented with a salad and probably some bread. Even if your stomach was producing hydrochloric acid efficiently, it would take a while for the vegetables in the salad to be digested because their high cellulose content makes them slow to break down. But you have impaired your stomach's function, so it will take even longer for them to be digested. Then comes the main course. Chewing carefully, you set the meat down on top of the bed of salad, beyond reach of the hydrochloric acid and enzymes needed to break down the protein in the meat. As it sits in your stomach at a temperature of 115 to 120 degrees, the meat begins to decompose. It reaches the intestines still largely undigested and continues to rot.  When the "normal" eating pattern is followed, the carbohydrates in the salad generally take about an hour and a half to break down. The meat proteins, however, take about three hours to digest, and the entire process is hampered both by the lack of hydrochloric acid and by the layer of salad sandwiched between the meat and the source of the acid. The vegetables in your meal actually need little hydrochloric acid to facilitate their digestion. Amylase, the enzyme of the salivary glands, has already begun the process of breaking them down, and enzymes from the pancreas will complete their digestion. It is the meat in your meal that needs the stomach acids the most.
 

Ideally, then, you should start a meal with your stomach empty and ready to receive the protein that it was designed to digest. Protein will, in fact, stimulate the vagus nerve, which in turn tells the stomach to produce more acid. Next, you should eat the potato or rice and finally the salad. You should eat the entire meal without water or coffee. If you are eating a stew, eat the meat first and the potatoes and other vegetables last. If you are having soup and the rest of the meal is heavily geared toward protein, set it aside and have it afterwards, not before the meal. By eating the potato or rice before the protein, you will cause the signals to your stomach to be reversed, since you don't need acid to digest this food, and your stomach "knows" it. If you alternate between mouthfuls of protein and carbohydrates, the vagus nerve will continuously tell the stomach to start or stop acid production, and you will have an incredible reaction of acid and alkaline working against each other. Protein and starch are, in sum, very poor combinations.

Such foods as potatoes, bread, rice, and corn the starches do well together since all are carbohydrates. Of course, vegetable and grains all have proteins too, but they are in a form that doesn't stimulate much acid formation. Foods such as nuts are better balanced because they have some protein, some carbohydrates, and some oils. Meat, however, is almost pure protein. An almond may be 3 to 4 percent protein, while beef is 90 percent protein. Coffee, like water, dilutes acid and interferes with the stomach's ability to do its work effectively. Orange juice also is bad, unless it is drunk 15 minutes before the meal. because fruit juice goes through the system quickly, it will not likely interfere with the rest of the meal if you allow that amount of time. If the juice is iced, however, you again risk anesthetizing the parietal cells so that they do not produce sufficient acid.  Raw fruits and raw vegetables do not combine well since they require different enzymes for digestion. These enzymes work against each other, causing fermentation. Cooking destroys the enzymes in fruits and vegetables, however, even cooking at 160 degrees for only a few moments, so if you want to combine fruits and vegetables, cook the vegetables, and then you will not have competing enzymes. Melons, however, should always be eaten alone. They not only tend to cause gas but also are very watery and contain unique enzymes that decompose very quickly. They generally start to decompose as soon as they hit the warm environment of the stomach. Eat them as snacks but never as part of a meal.
 
You should also strive to keep your intestines clear and not allow foods to remain long in the process of digestion. If you don't have frequent bowel movements, you absorb poison from partially digested foods in the intestinal tract. The constipation encourages the body to retain fluids to dilute these poisons. Constipation is, in fact, the most common problem I see in relation to water retention. The best enzymes to aid in digestion and help avoid the problem of constipation is Pancreatin. Aging often brings about decreased output of Hydrochloric Acid and a host of accompanying digestive problems. Don't, however, take an antacid to offset heartburn and gas because that will only intensify the problem in the long run. Take a hydrochloric acid supplement instead, combine foods better, and improve your eating habits to improve your digestion.

Basically, when it comes to combining foods, remember these rules:

Don't precede a meal with water or other liquids.

Eat proteins on an empty stomach

For the standard meal, eat meat, then potatoes or rice, then salad

Don't combine raw fruits and vegetables.

Fasting is one method of getting the body back into balance when it is out of kilter, as a means of healing imbalances in the system. An occasional fast will give the body an opportunity to start fresh, with renewed impetus toward total wellness.  In an earlier era the most frequent method of fasting was a water fast, but most authorities today agree that a juice and broth fast is superior, because it is alkalinizing, and most of us have too much metabolic acid in out systems. fresh raw juice of fruits and vegetables, plus vegetable broth and herb teas, are the standard fare for these fasts.  During a fast the body burns up or excretes large amounts of accumulated wastes. This is the protocol for each of the four days. The average person will lose 1 to 2 pounds daily, as well as gaining benefits of detoxification and organ renewal. Coming out of the fast is very important. You must exercise restraint in order not to throw away all the benefits of the fast. Begin to break the fast with some of the solid material from the vegetable soup at lunch and, in the evening, perhaps a little applesauce or yogurt. The next day, begin with a breakfast of a lightly poached egg, and some herb tea; at noon have some steamed vegetables; and in the evening have more vegetables broth and 1 oz of Noni Juice with solids included.  If you like, at 9:00 P.M. you may have the usual herb tea, with honey.
